For the Hollandaise Sauce:

  • 4 egg yolks
  • 5 cl water
  • 250g butter
  • A pinch of fleur de sel
  • Freshly ground black pepper
  • A pinch of cayenne pepper or Espelette pepper
  • The juice of 1 lemon

Instructions

  1. Peel and cook the asparagus in salted boiling water for 7-8 minutes, or steam for 5 minutes at 100°C.
  2. Cook the baby potatoes in boiling water or in a steam oven.
  3. Prepare the hollandaise sauce:
    1. In a saucepan, whisk together the egg yolks and water over low heat (maximum 60 degrees) until fluffy. Ensure not to scramble the eggs.
    2. Remove from heat and slowly add the butter while continuing to whisk.
    3. Season with salt, pepper, and cayenne pepper.
    4. Stir in the lemon juice.
  4. Chop the parsley and chives and set them aside.
  5. On a serving plate, arrange the asparagus, salmon, baby potatoes, and gray shrimp.
  6. Drizzle hollandaise sauce over the dish and sprinkle with chopped herbs.
