  • For the tartlets:
    • 1 yellow bell pepper
    • 1 red bell pepper
    • 1 orange bell pepper
    • 2 yellow onions
    • 6 Boursin Pepper cheese snacks
    • 1 drizzle of olive oil
    • A pinch of salt
    • A pinch of Espelette pepper
    • 2 tablespoons of honey
    • 1 sprig of thyme
    • 1 roll of puff pastry
    • Some Parmesan shavings

Instructions

  1. Wash the vegetables thoroughly.
  2. Peel the bell peppers, cut each in half, and remove the white membranes and seeds.
  3. Slice the peppers into 8 large pieces vertically.
  4. Peel the onions, cut them in half, and separate into petals.
  5. In a low-temperature skillet with a drizzle of olive oil, sweat the peppers and onions with a pinch of salt for 4-5 minutes.
  6. Add honey and cook for a few more minutes to caramelize the mixture.
  7. Season with Espelette pepper and a few sprigs of rosemary, then turn off the heat.
  8. Arrange the peppers and onions in a spiral pattern in the tartlet molds.
  9. Preheat the oven to 200°C (392°F).
  10. Unroll the puff pastry and prick the surface with a fork.
  11. Place the pastry over the peppers and onions in the molds.
  12. Bake for about 20 minutes until the pastry is golden and crispy.
  13. Shave some Parmesan.
  14. In a hot skillet, cook the Boursin Pepper snacks for 2 minutes on each side.
  15. Once out of the oven, remove the tart and cut it into pieces. Top with Parmesan shavings, Boursin, and serve immediately.
