Cooking Instructions
- Prepare three shallow bowls:
- In the first bowl, place the flour mixed with black pepper and a pinch of salt.
- In the second bowl, lightly beat the egg whites.
- In the third bowl, add the breadcrumbs, seasoning with salt and pepper.
- Cut the sole fillets into two strips lengthwise.
- Coat each piece of sole in the flour, shaking off any excess, then dip into the egg whites, and finally coat with breadcrumbs. Press down a little to ensure the breadcrumbs stick.
- Place the coated goujons on a plate and refrigerate for about 1 hour for extra crunchiness.
- Heat the oil in a deep fryer or a large pan to 180°C (350°F).
- Fry the goujons in batches until golden brown, roughly 3-4 minutes per side. Remove and let drain on a paper towel-lined plate.
