Ingredients

  • 1.5 liters of chicken broth (or 1 liter of water with a chicken stock cube)
    • 1.5 liters or 4 cups
  • 2 tablespoons of Tom Yum paste (chili paste)
    • 30 ml
  • 1 stick of lemongrass
  • 1 small red chili
  • 2 cm of galangal (available in Asian stores)
  • 6 kaffir lime leaves
  • 16 shrimp (scampi)
  • 16 cherry tomatoes
  • 1 handful of coriander
  • 12 button mushrooms
  • 100g rice noodles
    • about 3.5 ounces
  • 4 tablespoons of fish sauce
    • 60 ml
  • 2 tablespoons of sugar
    • 30 g

Instructions

  1. In a saucepan, add the chicken broth, Tom Yum paste, lemongrass, chili, galangal, and kaffir lime leaves. Bring to a boil for 5 minutes.
  2. Add the halved cherry tomatoes and quartered mushrooms to the pot.
  3. Cook the rice noodles separately and let them cool.
  4. Add sugar and fish sauce to your soup. Stir well and let it cook for an additional 5 minutes.
  5. Now add the shrimp and cook for just 1 minute, until they’re pink and cooked through.
  6. In bowls, place a portion of noodles, pour the broth over, and add four shrimp per person.
  7. Garnish with fresh coriander and enjoy!

You can find frozen blends of chili, galangal, and kaffir in Asian grocery stores for convenience.
