Instructions

  1. Peel and cook the asparagus in boiling salted water for 7 to 8 minutes, or steam them for 5 minutes at 100°C.
  2. Boil or steam the grenaille potatoes until tender.
  3. Prepare the hollandaise sauce:
    1. In a bowl, whisk together the egg yolks and water. Heat gently over a double boiler, whisking vigorously until frothy, being careful not to scramble the eggs.
    2. Remove from heat, and gradually add in the butter while continuing to whisk until smooth.
    3. Season with fleur de sel, black pepper, and cayenne or Espelette pepper. Finally, add lemon juice.
  4. Finely chop the parsley and chives.
  5. Plate the dish: first, lay down the asparagus, then add the grenaille potatoes, followed by the smoked salmon, and top with grey shrimp. Drizzle the hollandaise sauce over the top and garnish with chopped herbs.
