Ingredients
- 1 handful of fresh lavender flowers (about 100g)
- 500 ml of water
- 1 organic lemon (sliced)
- 750 g of organic cane sugar
Instructions
- In a large bowl, combine 500 ml of water, the sliced lemon, and the fresh lavender flowers.
- Cover the bowl with a towel and let it infuse in a dry place for 48 hours.
- After 48 hours, strain the mixture through a fine sieve. Be sure to press the flowers with a wooden spoon to extract all the liquid.
- In a saucepan, combine the strained infusion with the sugar and bring it to a boil over medium heat.
- Allow it to cook for about 20 minutes until it reaches a syrupy consistency.
- While the syrup is cooking, sterilize your bottles by rinsing them with boiling water and letting them dry.
- Pour the syrup into the sterilized bottles and seal tightly.
- Store the syrup in a cool, dry place, where it can be kept for several months.
