Ingredients
- For the Grilled Prawns:
- 4 large prawns
- 200g unsalted butter, softened

- 2 passion fruits, seeds and pulp included
- 1 young onion, finely chopped
- For the Mango Condiment:
- 1 ripe mango, diced
- 4 sprigs of fresh coriander, chopped
- 1 tablespoon soy sauce
Instructions
- Cut the prawns in half lengthwise and extract the coral from the heads.
- Allow the butter to soften at room temperature and mix in the spices, salt, coral, seeds, and pulp of one passion fruit until well combined.
- Shape the butter mixture into a log using plastic wrap and refrigerate until solid again.
- Prepare the mango by dicing it into small cubes.
- Finely chop the coriander and young onion.
- In a bowl, mix the mango, remaining passion fruit pulp, soy sauce, lime juice, coriander, and young onion. Taste and adjust seasoning as necessary.
- Remove the butter from the fridge and cut it into portions, then place them on top of the prawns.
- Under a broiler at 200°C (392°F), grill the prawns for about 5 minutes.
- Fill the heads of the prawns with the tropical fruit condiment.
