Ingredients

    • 1 head of green cabbage
    • 2 leeks
    • 100 grams of butter
    • 4 slices of Mortadella Bologna IGP

    • 200 ml of heavy cream (40%)
    • 100 ml of dry white wine
    • 1 shallot
    • Fleur de sel (to taste)
    • Freshly ground black pepper (to taste)

Instructions

  1. Remove 4 leaves from the cabbage and blanch them in salted water for 7 minutes. Immediately cool them by plunging them into ice water.
  2. Once cooled, carefully peel off the membrane from the leaves.
  3. Finely shred the remaining cabbage leaves.
  4. Julienne the leeks.
  5. In a pan over low heat, melt the butter. Add the shredded cabbage and julienned leeks, and sweat them for 10 to 15 minutes.
  6. Add the curry, fleur de sel, and a dash of pepper. Mix well and set aside.
  7. Finely chop the Mortadella Bologna IGP and incorporate it into the cabbage-leek mixture.
  8. Layer each cabbage leaf on a piece of cling film, fill with the cabbage mixture, and roll tightly. Wrap well.
  9. In a small pot, sauté the minced shallot in a bit of butter, deglaze with white wine, then add cream and blend until smooth using an immersion blender.
  10. Slice the cabbage rolls at an angle, and plate them, drizzling the emulsion over the top.
