Instructions

  1. Wash the oak leaf lettuce and set aside.
  2. In a pot of boiling salted water, cook the Grenaille potatoes for about 18 minutes until tender.
  3. Cut the apples into eighths, removing the cores.
  4. In a non-stick skillet, sauté the apple slices for 2 minutes on each side in a little butter, then sprinkle with sugar and coat in caramel.
  5. Cut the chicken breasts into strips (goujonnettes).
  6. In a non-coated skillet, melt a bit of butter over low heat.
  7. Brown the chicken strips for 2 minutes on each side, then cover and cook for an additional 4 minutes.
  8. Remove the chicken from the skillet and deglaze with apple cider vinegar.
  9. Add mustard and honey, cooking for 1 minute before returning the chicken to the pan.
  10. Cut the boiled potatoes into quarters.
  11. On a serving plate, arrange some oak leaf lettuce, the caramelized apple slices, boiled potatoes, and walnut halves.
