Ingredients

  • For the Dough:
    • 2 cups all-purpose flour (250g)
    • 1 tablespoon sugar (15g)
    • 1 teaspoon salt (5g)
    • 1 packet of dry yeast (7g)
    • ¾ cup warm water (180ml)
    • 2 tablespoons olive oil (30ml)
  • For the Filling:
    • 8 oz brie cheese (225g)
    • ¼ cup cranberry sauce (60g)
    • Fresh thyme leaves (optional)

Instructions

  1. In a mixing bowl, combine the flour, sugar, salt, and yeast.
  2. Make a well in the center and add the warm water and olive oil.
  3. Mix until a dough forms and knead for about 5 minutes on a floured surface.
  4. Place the dough in a greased bowl, cover, and let rise for 30 minutes until doubled in size.
  5. Preheat the oven to 375°F (190°C).
  6. Once risen, roll out the dough on a floured surface to about 1/2 inch thick.
  7. Cut out circles using a cutter or glass, about 3 inches in diameter.
  8. Place half the circles on a baking sheet. Put a piece of brie cheese and a spoonful of cranberry sauce on each.
  9. Add thyme leaves if desired, then cover with the remaining dough circles.
  10. Seal the edges by pressing down with a fork.
  11. Brush the tops with olive oil and bake for 20 minutes until golden brown.
