Ingredients

  • 12 prepared blinis (Picard brand recommended)
  • 2 fillets of rainbow trout
  • 200 g frozen mango cubes
  • 100 g fresh cream cheese
  • 1 sprig of chives
  • 2 radishes
  • 1 passion fruit
  • 100 g coarse salt
  • 1 handful of pink peppercorns
  • 5 ml white vinegar
  • 1 pinch of fleur de sel (fine sea salt)
  • Freshly ground black pepper

Instructions

  1. In a dish, pour the coarse salt and pink peppercorns.
  2. Lay the trout fillets skin-side down on the salt, cover with plastic wrap, and place a weight over it.
  3. Refrigerate for 2 hours to allow the fish to cure.
  4. In a small saucepan, simmer the mango and half of the passion fruit at low heat for about 15 minutes until softened.
  5. Add a splash of white vinegar and let it cool.
  6. In a bowl, mix the cream cheese with ground black pepper, salt, and the mango compote.
  7. Heat the blinis in the oven for 5 minutes at 180°C (356°F) with circulating heat.
  8. Rinse the trout fillets, remove the skin, and slice them thinly.
  9. Plate a bit of citrus cream on each blini, top with a slice of trout, and garnish with a sprig of chives or a small sprig of chervil.
  10. Slice mini cucumbers or radishes and pickled onions to serve alongside.
