Ingredients
- Base:
- 50 g Butter
- 50 g All-purpose flour
- ½ liter Milk
- 2 Pinches of salt
- Nutmeg (to taste)

- 200 g Appenzeller® Extra cheese, grated
- 2 Egg yolks (keep the whites for coating)
- For the coating:
- Egg white
- Flour
- Breadcrumbs
- Salt and freshly ground black pepper (to taste)
Instructions
- Start by making a béchamel: Melt the butter in a saucepan, then add the flour. Cook until it smells like a cookie.
- Gradually add the milk while continuously stirring to avoid lumps.
- Once the milk is fully incorporated, turn off the heat and mix in the grated Appenzeller® Extra cheese.
- Stir well and adjust seasoning with salt, ground black pepper, and freshly grated nutmeg.
- Transfer the mixture into a rectangular dish, cover with plastic wrap (pressing it against the surface to prevent a skin from forming), and refrigerate for 6 hours.
- After chilling, cut the mixture into squares.
- Prepare for frying: Pass each piece through flour, dip it in egg white, and then coat with breadcrumbs.
- In a deep fryer, heat oil to 180°C (356°F). Fry the croquettes for 2-3 minutes until golden brown.
