Ingredients

  • Base:
    • 50 g Butter
    • 50 g All-purpose flour
    • ½ liter Milk
    • 2 Pinches of salt

    • 200 g Appenzeller® Extra cheese, grated
    • 2 Egg yolks (keep the whites for coating)
  • For the coating:
    • Egg white
    • Flour
    • Breadcrumbs
    • Salt and freshly ground black pepper (to taste)

Instructions

  1. Start by making a béchamel: Melt the butter in a saucepan, then add the flour. Cook until it smells like a cookie.
  2. Gradually add the milk while continuously stirring to avoid lumps.
  3. Once the milk is fully incorporated, turn off the heat and mix in the grated Appenzeller® Extra cheese.
  4. Stir well and adjust seasoning with salt, ground black pepper, and freshly grated nutmeg.
  5. Transfer the mixture into a rectangular dish, cover with plastic wrap (pressing it against the surface to prevent a skin from forming), and refrigerate for 6 hours.
  6. After chilling, cut the mixture into squares.
  7. Prepare for frying: Pass each piece through flour, dip it in egg white, and then coat with breadcrumbs.
  8. In a deep fryer, heat oil to 180°C (356°F). Fry the croquettes for 2-3 minutes until golden brown.

  • For an extra crunch, consider adding some grated Parmesan to the breadcrumbs.
