Ingredients

  • 500 g tagliatelle
    • Fresh or dried tagliatelle can be used
  • 1 Cacciatora AOP salami
    • This Italian salami is rich in flavor; alternatively, use any other favorite salami.
  • ½ butternut squash
    • Peeled and diced into small cubes
  • 6 sage leaves
  • 75 g butter
  • Fleur de sel (Flower Salt)
  • Freshly ground black pepper
  • Parmesan cheese (optional)

Instructions

  1. Peel and cube the butternut squash into small dice.
  2. Remove the skin from the Cacciatora salami and cut it into 0.5 cm thick slices, then cut those slices into strips.
  3. Cook the tagliatelle in a large pot of boiling salted water according to package instructions.
  4. In a traditional pan (without non-stick coating), dry fry the salami strips for about 2 minutes until they are slightly crispy.
  5. Remove the salami, leaving the rendered fat in the pan.
  6. Add the diced butternut squash into the same pan and sauté for 5 minutes until they are cooked but still slightly crunchy. Remove and set aside.
  7. In the same pan, melt the butter over low heat and add the sage leaves.
  8. Add the cooked tagliatelle, season with fleur de sel and freshly ground black pepper, and toss to combine. If needed, add a little pasta cooking water to help combine the ingredients.
  9. Incorporate the butternut squash and Cacciatora salami, mixing well to blend the flavors.
  10. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

Feel free to tweak the ingredients as per your preference, substituting different vegetables or types of salami for variations!

Recipe Tips

  • For additional flavor, consider adding a sprinkle of crushed red pepper for a bit of heat.
