Ingredients
For the Beef Roll:
- 250g of Belgian Blue White beef (“Souveraine bleue”)
- 1 carrot
- 1 small white onion
- 1 bell pepper of each color (red, green, yellow)
- 50g of green beans
- 100g of blanching potatoes
- 250g of farm butter
For Accompaniment:
- 1 firm-fleshed potato
For the Sauce:
- 190ml of veal stock
- 200ml of 35% cream
- 50ml of cognac
Instructions
- Preheat your oven to 200°C (392°F).
- Slice the firm-fleshed potato thinly, every millimeter. Place it in a fan shape on a baking tray. Brush with butter, season with salt and pepper, and bake for 20 to 25 minutes.
- Peel the carrot and onion and remove seeds from the bell pepper. Cut the onion and carrots into thin slices and the bell peppers into quarters.
- Trim the green beans. Heat 1 liter of salted water, then add the beans for 3 minutes. Remove with a slotted spoon and cool in icy water.
- In a pan, melt a knob of butter and sauté the vegetables. They should remain crunchy!
- Sauté the quartered mushrooms in another knob of butter and set aside.
- In the skillet, quickly sear the beef on all sides. Place it on a sheet of parchment paper, which is on aluminum foil.
- Add 3 quarters of the bell peppers on top of the beef. Roll it up tightly to create a nice “candy” and place it back in the oven. Cook for 10 to 15 minutes depending on your preference – rare, medium, or well done.
- For the sauce, deglaze the skillet with cognac and flambé to remove excess alcohol. Once the flames subside, add half of the veal stock and let it reduce. Add a little cream and season with salt and pepper.
