Ingredients

    • 6 cherry tomatoes
    • 6 strawberries
    • 1 spring onion
    • 2 tablespoons olive oil
    • 1 tablespoon white vinegar
    • A bit of grape seed oil

Instructions

  1. In a pan, add a bit of grape seed oil, heat over high heat, and sear the beef fillet for 1 minute on each side until a nice crust forms.
  2. Remove from heat and let cool.
  3. In a bowl, combine soy sauce, lime juice, ginger, garlic, sesame oil, lemongrass, chili, and sugar. Mix well.
  4. Place the marinade and beef in a resealable plastic bag, remove air, and seal. Refrigerate for at least 4 hours.
  5. Dice the cherry tomatoes and strawberries finely (brunoise).
  6. Thinly slice the spring onion.
  7. In a bowl, combine tomatoes, strawberries, spring onion, olive oil, and white vinegar. Mix well.
  8. Slice the beef thinly.
  9. Add 3 tablespoons of marinade to the tomato-strawberry mix and drizzle over the beef.
  10. Garnish with a few whole strawberries and thinly sliced spring onion.
