Ingredients
For the Ravioli
- 300g ground fresh pork
- 70g finely chopped onions
- 1 small clove of garlic
- 1 packet of ravioli wrappers
For the Broth
- 1 chicken thigh
- 1 onion
- 2 Shanghai bok choy
- 1 green onion
- 1 teaspoon oyster sauce
- 2 teaspoons sesame oil
- Fried onions (for garnish)
- Sesame oil (for serving)
- Coriander leaves (for garnish)
- Salt (to taste)
- Sugar (to taste)
- Pepper (to taste)
Instructions
Preparing the Ravioli
- Finely chop the onions and garlic (avoid using a machine for this).
- In a large bowl, combine the pork, onions, and garlic. Add 1 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of oyster sauce, and 2 teaspoons of sesame oil. Season with a pinch of pepper (if using more than 1kg of meat, you may add one egg to the mixture).
- Place 1 teaspoon of the filling in the center of each ravioli wrapper. Fold two opposing corners together to form a triangle. Fold the bottom edges of the triangle towards the center, ensuring the ravioli is well sealed to prevent it from opening during cooking.
Making the Broth
- Prepare the broth by boiling 3 liters of water with 1 chicken thigh, halved onion, a bit of salt, and sugar (approximately 30 minutes).
- Chop the bok choy into pieces (stems and leaves) and cook them in the broth for a few minutes before serving.
- Cook the ravioli separately in boiling water, making sure to cook only a few at a time to prevent them from sticking together.
- Place the cooked ravioli in a bowl and pour the broth over them.
- Serve topped with finely chopped green onions, coriander leaves, and fried onions. Drizzle with a few drops of sesame oil.
For Fried Ravioli
- Fry the ravioli directly in hot oil at a maximum temperature of 165°C.
- Serve with sweet and sour sauce or a sweet chili sauce.
Notes
For best results, it’s ideal to consume the ravioli on the same day they are made. They can be stored in the refrigerator for a maximum of 24 hours (ensure they are covered to prevent drying out). Freezing is also an option.
