Ingredients
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 24 shrimp, peeled and deveined
- 1 shot glass of cognac
- 33 cl canned cherry tomatoes
- 100 ml heavy cream
- 1 teaspoon Espelette pepper
- Salt, to taste
Instructions
- Finely chop the onion and mince the garlic.
- Chop the cherry tomatoes into small cubes.
- In a skillet, heat the olive oil over medium heat. Cook the shrimp for 30 seconds on each side, then remove them from the skillet while keeping the juices.
- Sauté the onion and garlic in the remaining oil until softened.
- Add the cognac and flambé to ignite the alcohol.
- Stir in the cherry tomatoes and cook for 10 minutes.
- Add the cream, Espelette pepper, and salt, mixing well.
- Once the sauce has reduced, add the shrimp back into the skillet, cooking for another minute before serving.
