Ingredients
- For the White Ragù:
- 6 Italian pepper sausages
- 3 large carrots
- 1 yellow onion
- 1 clove of garlic
- 2 stalks of celery
- 200 ml of white wine
- 200 ml of chicken broth
- 500 g of pennette pasta
- 1 teaspoon of tomato paste
- 1 bay leaf
- A good piece of Parmesan cheese
- A splash of olive oil
- Fleur de sel (flower of salt)
Instructions
- Slice the onion finely.
- Crush the garlic.
- Peel and dice the carrots into small cubes (brunoise).
- Peel and dice the celery into small cubes (brunoise).
- Remove the casing from the sausages.
- In a large pot, heat a splash of olive oil over low heat and add the onions and garlic.
- Cook slowly until the onions are translucent.
- Add the carrots and celery, and sweat for about 3-4 minutes.
- Add the sausage meat, increase the heat, and sauté until browned (you want some fond at the bottom of the pot).
- Deglaze with the white wine, allow to boil for 1 minute, then add the chicken broth.
- Stir in the tomato paste, bay leaf, and a pinch of salt, reduce the heat to the minimum, and let simmer for 2-3 hours.
- Grate a generous amount of Parmesan cheese.
- Cook the pennette pasta in salted water according to package instructions. When done, drain and add to the pot with the ragù.
- Mix well over low heat for about 30 seconds.
