    • 1 serving of tartar sauce (preferably Pauwels)

Cooking Instructions

  1. Prepare three shallow bowls:
    • In the first bowl, place the flour mixed with black pepper and a pinch of salt.
    • In the second bowl, lightly beat the egg whites.
    • In the third bowl, add the breadcrumbs, seasoning with salt and pepper.
  2. Cut the sole fillets into two strips lengthwise.
  3. Coat each piece of sole in the flour, shaking off any excess, then dip into the egg whites, and finally coat with breadcrumbs. Press down a little to ensure the breadcrumbs stick.
  4. Place the coated goujons on a plate and refrigerate for about 1 hour for extra crunchiness.
  5. Heat the oil in a deep fryer or a large pan to 180°C (350°F).
  6. Fry the goujons in batches until golden brown, roughly 3-4 minutes per side. Remove and let drain on a paper towel-lined plate.
  7. Serve immediately with tartar sauce and lemon wedges, garnished with fresh watercress.

For a healthier option, you can bake the goujons in the oven instead of frying them. Just spray them lightly with oil and bake in a preheated oven at 200°C (392°F) for 15-20 minutes, flipping halfway through.
