Ingredients

  • For the Grilled Prawns:
    • 4 large prawns
    • 200g unsalted butter, softened
    • 1 tablespoon spices (your choice)
    • Pinch of fleur de sel (sea salt)
    • Juice of 1 lime
    • 2 passion fruits, seeds and pulp included
    • 1 young onion, finely chopped
  • For the Mango Condiment:
    • 1 ripe mango, diced
    • 4 sprigs of fresh coriander, chopped
    • 1 tablespoon soy sauce

Instructions

  1. Cut the prawns in half lengthwise and extract the coral from the heads.
  2. Allow the butter to soften at room temperature and mix in the spices, salt, coral, seeds, and pulp of one passion fruit until well combined.
  3. Shape the butter mixture into a log using plastic wrap and refrigerate until solid again.
  4. Prepare the mango by dicing it into small cubes.
  5. Finely chop the coriander and young onion.
  6. In a bowl, mix the mango, remaining passion fruit pulp, soy sauce, lime juice, coriander, and young onion. Taste and adjust seasoning as necessary.
  7. Remove the butter from the fridge and cut it into portions, then place them on top of the prawns.
  8. Under a broiler at 200°C (392°F), grill the prawns for about 5 minutes.
  9. Fill the heads of the prawns with the tropical fruit condiment.

This dish can be prepared a day in advance! Just grill the prawns right before serving for the best flavor.
