Instructions

  1. Preheat the oven to 200°C (392°F) in convection mode.
  2. Line a baking sheet with silicone or parchment paper.
  3. Spread the hazelnuts on the baking sheet and roast for 20 minutes, checking every 5 minutes to prevent burning.
  4. On another baking sheet lined with silicone, melt the cane sugar in a saucepan to create caramel. Avoid stirring; let it melt slowly over medium heat. If it colors too quickly, add a tablespoon of water.
  5. Once the caramel is ready and has a lovely golden color, pour it onto the baking sheet and let it harden.
  6. Once the hazelnuts are roasted, allow them to cool. Place them in a kitchen towel, close it, and rub the hazelnuts together to remove their skins.
  7. In a food processor, combine the hazelnuts and the caramel broken into pieces. Blend on high speed for 1 minute until you achieve a praline (a dry paste).
  8. Add the hazelnut paste and blend for another 30 seconds.
  9. In a double boiler, melt the chocolate broken into pieces over low heat.
  10. In the food processor, add the oil, melted chocolate, and blend for 1 minute at medium speed.
  11. Transfer the spread into a glass jar. It will keep in the fridge for 2-3 weeks. Be sure to take it out a few minutes before serving for a softer texture.
