  1. Heat the vegetable oil in a pan and sauté the chicken pieces for about 10 minutes or until they are golden brown. Set aside.
  2. In the same pan, add the finely chopped onions, garlic, and ginger, followed by the tomato puree. Stir in the ground saffron and the crushed turmeric.
  3. Add the curry leaves, salt, and pepper, and cook covered for approximately 6 to 7 minutes.
  4. Return the chicken to the pan and pour in half a cup of water. Stir and let it simmer, covered, for about 20 minutes, checking that the chicken is cooked through.
